Summary
Collection of about 245 culinary and medicinal recipes (with two pinned and five loosely laid in) mostly in Beulah Hutson's clear secretary hand, characterized by flourishing ascenders. Hutson organized the volume roughly in half with culinary recipes at the beginning of the volume and medicinal recipes beginning on page 92. The volume contains at least three other hands, with one of these later hands paginating and numbering most of the recipes. Recipes in Huston's hand range from 1-162 and 174-223. An italic hand begins half-way down page 49 (recipe number 163) and continues through the top quarter of page 55 (recipe 172) where a secretary hand takes over for the final recipe (number 173) of the first section. Recipes from page 110 on are unnumbered, and the secretary hand that begins on page 110 deviates from Huston's organization, adding culinary recipes in the latter half of the volume. Recipes include "To Make Past Royall" (page 1), "To Make Custards" (page 3), "Orange Tarts in Puff Paste" (page 5), "Artificiall Sturgeon" (page 18), "To make Rare Wiggs" (page 20), "To make Rasberry Wine" (page 36), "To make Quince Cream" (page 55), "The most precious water Called Aqua Mirabilis" (page 95), "A drinke to prevent Miscarrying" (page 96), "A Rare drinke to Stopp Vomiting" (page 100), and "A receipt good against the Gout" (page 103). Pages 37-38 also feature a consecutive series of six sugar boiling recipes beginning with "To Clarifie Sugar," followed by five recipes "To know when your Sugar is..." in different states: "in a thin Sirropp," "in a full Sirropp," "at a Christle hight," "at a Candy hight," and "at a Casteing hight." These sugar recipes also appear at the beginning of Martha Washington's "A Booke of Sweatmeats."
